Thanks for this! And sorry for the wait, I've been away on vacation.
The snippets provider also needs to be updated to load snippets from vsnip: https://github.com/Saghen/blink.cmp/tree/main/lua/blink/cmp/sources/snippets. You don't need to update the vim help docs as they're generated from the markdown.
